At Rorschach, we are an experimental brewery, always pushing the boundaries of flavor, sometimes at the expense of traditional style parameters. For years, we’ve wanted to brew a series of Bavarian beers, but we wanted to do it right. Our German Series beers are crafted in accordance with the Reinheitsgebot, the Bavarian beer purity law, and served in steins (16oz or 32oz) for your enjoyment!

Looking back to its origins, all beer used to be mixed culture fermentation and with enough time would eventually become sour. Thanks to modern advancements in brewing science and the industrial revolution, we've observed a boom in brewing efficiency coinciding with a decline in fermentation individuality. Our mixed fermentation sour program was built on the foundation of our house culture of wild yeast and bacteria, a culture that was developed over many years prior to opening Rorschach.
